Who doesn’t love cake for breakfast? Especially when it is a new twist on the classic favorite, pancakes. This pancake breakfast cake recipe is perfect for those that don’t want to or have the time to stand over the stove and cook individual pancakes. Just put all of the ingredients together, pop it in the oven and in 25 minutes you have a delicious pancake treat that you can take with you on the go.

This recipe adds convenience to a busy schedule and a fun twist on breakfast. I like to make this recipe on the weekend and enjoy it throughout the week. It makes an easy on the go breakfast, snack or treat. With no added sugars, the sweetness of the raspberry jam add just enough sweetness to tickle your taste buds. You can use peanut butter or try it with my homemade sunflower butter. I love how magical it is when the sunflower butter changes colors when baked!

Equipment

  • Large mixing bowl
  • Measuring cups
  • Whisk and/or Spoon
  • 8 X 8 baking pan
  • Parchment paper

Ingredients
  

  • 2 C. Almond Flour
  • ¾ tsp Baking soda
  • ¾ tsp Sea salt
  • ¾ tsp Cinnamon
  • 3 Eggs
  • 1 tsp Vanilla
  • ¾ C. Water or (non-dairy) milk
  • ¼ C. Sunflower butter If non keto can use peanut butter
  • ¼ C. Low or no sugar raspberrry jam

Instructions
 

  • Preheat your oven to 350° Fahrenheit
  • In a large mixing bowl add your almond flour, baking soda, cinnamon and salt. Whisk together.
  • Add the eggs and vanilla and incorporate well.
  • Add the water and get all of the lumps out of the mixture.
  • Line your 8 X 8 baking pan with parchment paper.
  • Pour your mixture into the lined baking pan.
  • Spread the sunflower butter and raspberry jam evenly over the top of your mixture.

  • Use a spoon or knife to gently swirl the sunflower butter and raspberry jam into the pancake batter.

  • Cook for 25-30 minutes unitl the top is golden brown.
  • Let it cool and enjoy!
